These are such a yummy treat! They really taste like cheesecake!

Recipe makes about 38 bites
1 bite = 34 calories
Ingredients-
8 oz cream cheese softened
1/2 cup butter softened
3/4 cup stevia(I used Sweet Additions powdered stevia from Aldi)
1 tsp vanilla extract
Beat all ingredients with a hand held mixer on high until smooth & fluffy.
Drop by the spoonful onto a parchment or wax paper lined baking sheet. (I used a piping bag, but it isn’t really necessary)
Freeze for at least 2 hours & store in your freezer.
Enjoy!
Would it be possible to substitute coconut oil for the butter?

I made these today with powdered Swerve. I also whipped in some frozen berries (thawed first). They turned out great!

The only thing that has any carbs is the cream cheese. There’s 8 total, so depends on how many bites you end up with.

You might want to be specific about your sweetener in the recipe – when I hear “stevia,” I assume stevia extract since that’s just stevia, but the sweetener you’re using is a blend with something else (I forget what – dextrose?). There’s a BIG difference in how those are going to behave and how much you’d want to use.

I made these last night and followed the directions perfectly. However, they were super bitter and I had to throw them out so maybe I did something wrong. My daughter helped so she may have added too much vanilla but I wouldn’t think that would matter. Also, I’ve had the bag of powdered stevia for a while so not sure if that would make a difference. Any ideas what went wrong?

Powdered stevia can be quite bitter. It all depends on the brand you use. Mine were a tad bitter but it was still a nice sweet treat.

I made this and couldn’t get it fluffy at all…mixed all ingredients and followed the directions ver batum. Read online that its best to beat the cream cheese on low til fluffy then add the sugar (substitute) slowly. Idk…in freezer now. More a sheet of thick liquid type substance but going to cut it in sections.

Powdered. Maybe i missed their moment but It never did hit a “fluffy”state. Stayed a thick creamy mixture. Will update tomorrow how these are after freezing!
