These are such a great low carb option! The combination of sweet crunchy apple with the savory tuna & melted cheese is really quite tasty! These are even good the next day cold! You can obviously use whatever your favorite tuna salad recipe is, but we are avoiding sugar so this is how we made it.

Recipe makes about 19 servings
1 serving = 1 apple tuna melt = 77 calories
Ingredients-
2 – 5 oz cans solid white albacore tuna drained
1/4 cup dill relish
1/2 cup Spectrum Light Canola Mayo
Salt & pepper to taste
4 small apples sliced into 1/2 inch slices (I used small fuji apples) w/ core cut out
6 oz cheddar cheese
Mix up tuna, relish, mayo, salt, & pepper. Set aside.
Lay apple slices out on a parchment paper covered baking sheet.
Top each apple slice with 1 tbsp tuna salad.
Top each one with cheese.
Bake in a preheated 350 degree oven for about 5 minutes. You just want the cheese to melt. The apple will get a little warm, but you don’t want to cook it. You want it to still be nice & crunchy.
