I found myself really excited for lunch today because I couldn’t wait to eat some of this! It is such a great summer salad.
Recipe makes 6 servings
1 serving = 2 cups = 317 calories
1 cup uncooked quinoa
4 oz kale chopped w/ large stems removed
Zest of 2 lemons
3/4 cup chopped walnuts
5 oz reduced fat feta
Juice of 2 lemons
1/4 cup olive oil
1 shallot roughly chopped
2 cloves garlic minced
Salt & pepper to taste
Cook quinoa according to package directions.
Set aside to cool.
In a food processor blend together olive oil, lemon juice, shallot, garlic, salt & pepper.
Once quinoa has cooled stir together kale, quinoa, feta, walnuts, & lemon zest.
Pour dressing over salad & stir well to coat.
