Peanut Butter, Banana, & Honey Muffins



The kids & I gobbled these up! They are really good & made the house smell amazing!

Recipe adapted from

Recipe makes 15 muffins
1 muffin = 3 weight watchers smart points = 123 calories

1 cup all purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
4 ripe bananas mashed
1/4 cup egg beaters or better’n eggs
1/4 cup truvia brown sugar blend
2 tbsp honey
1 tsp vanilla extract
4 tbsp pb2
1/2 cup + 2 tbsp unsweetened almond milk
1 tbsp melted coconut oil

In a large bowl stir together flours, baking soda, baking powder, cinnamon, & salt.

In a medium bowl whisk together mashed bananas, egg beaters, truvia, honey, vanilla extract, pb2, & almond milk. Slowly whisk in coconut oil.

Stir wet ingredients into dry ingredients.

Spray muffin pan with non stick cooking spray. Fill 2/3 full.

Bake in a preheated 350 degree oven for 20-25 minutes.
