Southwestern Egg White Muffins

These turned out really good! They are low in calories & high in protein! I may try to use foil cupcake liners next time because these ones stuck a bit.

Recipe makes 12 muffins
1 muffin = 92 calories = 1 weight watchers smart point

Ingredients-
1 can black beans drained & rinsed
1 tsp cumin
1 tsp salt
1/4 tsp pepper
Pinch of red pepper flakes
1 medium onion diced
1 green bell pepper diced
Nonstick cooking spray
2 1/4 cup egg whites
Salt & pepper to taste

Cook onions until soft over medium heat in a pan that has been sprayed with non stick cooking spray. Set aside.

Cook green peppers until soft over medium heat in a pan that has been sprayed with non stick cooking spray. Set aside.

Stir together rinsed black beans, cumin, salt, pepper, & red pepper flakes.

Fill a muffin tin with papers & spray it all with non stick cooking spray.

Into each cup spoon 1 1/2 tbsp of black beans, 2 tsp of onion, & 2 tsp of green pepper.

Pour 3 tbsp of egg whites over top. Sprinkle tops with additional salt & pepper to taste.

Bake in a preheated 350 degree oven for about 15-20 minutes or until egg has set up.
