Creamy Vegan Cauliflower Soup



This had really great flavor & we all loved it! I served it with salad & breadsticks.

Recipe adapted from

Recipe makes 7 servings
1 serving = 2 cups = 5 weight watchers smart points

1 tbsp olive oil
1 medium onion diced
2 stalks celery chopped
2 cloves garlic minced
4 large potatoes chopped
1 large head of cauliflower roughly chopped
6 cups vegetable broth
1/4 cup full fat coconut milk (comes in a can)
Salt & pepper to taste


Heat olive oil in a large soup pot over medium heat. Add diced onions & celery & cook until soft. Add garlic & cook another 30 seconds.


Add potatoes, cauliflower, & broth.


Bring to a boil, reduce heat, & simmer for 20-25 minutes.


Remove from heat & blend until smooth using an immersion blender.


Stir in coconut milk. Add salt & pepper to taste.
