Lemony Quinoa & Kale Salad With Feta & Walnuts

I found myself really excited for lunch today because I couldn’t wait to eat some of this! It is such a great summer salad.

Recipe makes 6 servings
1 serving = 2 cups = 317 calories

Ingredients-
1 cup uncooked quinoa
4 oz kale chopped w/ large stems removed
Zest of 2 lemons
3/4 cup chopped walnuts
5 oz reduced fat feta
Juice of 2 lemons
1/4 cup olive oil
1 shallot roughly chopped
2 cloves garlic minced
Salt & pepper to taste

Cook quinoa according to package directions.
Set aside to cool.

In a food processor blend together olive oil, lemon juice, shallot, garlic, salt & pepper.

Once quinoa has cooled stir together kale, quinoa, feta, walnuts, & lemon zest.

Pour dressing over salad & stir well to coat.

Tuna Melt on an Apple Slice

These are such a great low carb option! The combination of sweet crunchy apple with the savory tuna & melted cheese is really quite tasty! These are even good the next day cold! You can obviously use whatever your favorite tuna salad recipe is, but we are avoiding sugar so this is how we made it.

Recipe makes about 19 servings
1 serving = 1 apple tuna melt = 77 calories

Ingredients-
2 – 5 oz cans solid white albacore tuna drained
1/4 cup dill relish
1/2 cup Spectrum Light Canola Mayo
Salt & pepper to taste
4 small apples sliced into 1/2 inch slices (I used small fuji apples) w/ core cut out
6 oz cheddar cheese

Mix up tuna, relish, mayo, salt, & pepper. Set aside.

Lay apple slices out on a parchment paper covered baking sheet.

Top each apple slice with 1 tbsp tuna salad.

Top each one with cheese.

Bake in a preheated 350 degree oven for about 5 minutes. You just want the cheese to melt. The apple will get a little warm, but you don’t want to cook it. You want it to still be nice & crunchy.

Peanut Butter, Banana, & Honey Muffins

The kids & I gobbled these up! They are really good & made the house smell amazing!

Recipe makes 15 muffins
1 muffin = 3 weight watchers smart points = 123 calories

Ingredients-
1 cup all purpose flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
4 ripe bananas mashed
1/4 cup egg beaters or better’n eggs
1/4 cup truvia brown sugar blend
2 tbsp honey
1 tsp vanilla extract
4 tbsp pb2
1/2 cup + 2 tbsp unsweetened almond milk
1 tbsp melted coconut oil

In a large bowl stir together flours, baking soda, baking powder, cinnamon, & salt.

In a medium bowl whisk together mashed bananas, egg beaters, truvia, honey, vanilla extract, pb2, & almond milk. Slowly whisk in coconut oil.

Stir wet ingredients into dry ingredients.

Spray muffin pan with non stick cooking spray. Fill 2/3 full.

Bake in a preheated 350 degree oven for 20-25 minutes.

Kid Friendly Shamrock Pretzel Pops

How fun are these? We have a playdate with some new friends tomorrow & since it is St. Patty’s day I thought it would be fun to take these as a snack!

Ingredients-
Pretzel twists
Hershey Kisses
M&M’s
Sucker or cake pop sticks

Line your baking sheet with parchment paper. Arrange 3 pretzels per pop as seen above. Place a Hershey kiss in the center. Bake in a preheated 350 degree oven for about 1 minute or until the kiss looks like it is starting to melt.

Push the stick right into the chocolate & press a green M&M in the center. Work quickly so the chocolate doesn’t harden before you get the sticks in.
Let cool completely before removing from the parchment paper. I put mine in the freezer to speed up the setting process.

Southwestern Egg White Muffins

These turned out really good! They are low in calories & high in protein! I may try to use foil cupcake liners next time because these ones stuck a bit.

Recipe makes 12 muffins
1 muffin = 92 calories = 1 weight watchers smart point

Ingredients-
1 can black beans drained & rinsed
1 tsp cumin
1 tsp salt
1/4 tsp pepper
Pinch of red pepper flakes
1 medium onion diced
1 green bell pepper diced
Nonstick cooking spray
2 1/4 cup egg whites
Salt & pepper to taste

Cook onions until soft over medium heat in a pan that has been sprayed with non stick cooking spray. Set aside.

Cook green peppers until soft over medium heat in a pan that has been sprayed with non stick cooking spray. Set aside.

Stir together rinsed black beans, cumin, salt, pepper, & red pepper flakes.

Fill a muffin tin with papers & spray it all with non stick cooking spray.

Into each cup spoon 1 1/2 tbsp of black beans, 2 tsp of onion, & 2 tsp of green pepper.

Pour 3 tbsp of egg whites over top. Sprinkle tops with additional salt & pepper to taste.

Bake in a preheated 350 degree oven for about 15-20 minutes or until egg has set up.

Creamy Vegan Cauliflower Soup

This had really great flavor & we all loved it! I served it with salad & breadsticks.

Recipe makes 7 servings
1 serving = 2 cups = 5 weight watchers smart points

Ingredients-
1 tbsp olive oil
1 medium onion diced
2 stalks celery chopped
2 cloves garlic minced
4 large potatoes chopped
1 large head of cauliflower roughly chopped
6 cups vegetable broth
1/4 cup full fat coconut milk (comes in a can)
Salt & pepper to taste

Heat olive oil in a large soup pot over medium heat. Add diced onions & celery & cook until soft. Add garlic & cook another 30 seconds.

Add potatoes, cauliflower, & broth.

Bring to a boil, reduce heat, & simmer for 20-25 minutes.

Remove from heat & blend until smooth using an immersion blender.

Stir in coconut milk. Add salt & pepper to taste.

Flourless Chocolate Protein Cookies

I may have just come up with one of the most amazing yet healthy cookies ever. These taste like brownies. They are soft & chewy, but if you bake them a little longer they can be crunchy if that is what you prefer.

Recipe makes 1 dozen cookies
1 cookie = 2 weight watchers smart points = 51 calories

Ingredients-
2 oz Green Mountain Farms Whipped Cream Cheese & Greek Yogurt Blend (regular cream cheese will work, but will change the smart points)
1/4 cup truvia
2 eggs lightly beaten
1/4 cup Land O’ Lakes Light Butter melted
1 tsp vanilla extract
1/4 cup unsweetened cocoa powder
1 scoop lean chocolate protein powder  (I used Six Star Pro Nutrition)

Bring cream cheese to room temperature. Or if you forget like I always do you can stick it in the microwave for about 10-20 seconds.
Using an electric mixer beat together cream cheese & truvia. Set aside.

In a separate bowl whisk together melted butter, lightly beaten eggs, & vanilla extract. Some lumps are ok.

Combine the egg mixture & cream cheese mixture & beat until smooth. Whisk in cocoa powder & protein powder.

Spoon into mounds on parchment paper lined baking sheets.

Bake in a preheated 375 degree oven for about 20 minutes.

Clementine & Dark Chocolate Merengue Bites

I make a lot of merengue cookies but I was wanting something to treat my sweet craving & my need to munch on something as a snack. These turned out absolutely amazing! I used less sugar in them but you can’t even tell!

Recipe makes 20 servings
1 serving = 20 bites = 2 weight watchers smart points = 33 calories

Ingredients-
4 egg whites
1/2 tsp cream of tartar
1/2 cup sugar
1/2 tsp vanilla extract
1/4 tsp orange extract
Zest of 4 small clementines
1 small 70-85% dark chocolate bar finely chopped (I used Moser Roth 85% chocolate bar = 7sp)

Separate your egg whites while cold & then let the whites come to room temperature.

Work on prepping your clementine zest & chopping up your chocolate bar while the egg whites come to room temperature.

Chop your chocolate bar very fine. If you have a lot of large chunks they will clog up your pastry bag. (I know this from experience)

Using an electric mixer beat your egg whites on high for about 20 seconds.

Add your cream of tartar & continue to beat on high until soft peaks form.

Slowly add your sugar 1 tbsp at a time while continuing to beat on high until stiff peaks form.
Add vanilla & orange extracts & beat until combined.

Fold in clementine zest & chocolate.

Scoop into a pastry bag or a large ziploc bag with the corner cut off. I tried to use a fancy tip for these but the chocolate kept clogging it up. Pipe them onto a parchment paper covered baking sheet. Make them about the size of a penny.

Bake in a preheated 250 degree oven for about 20-30 minutes. Keep a close eye on them towards the end.
Let them sit on the cookie sheet for about 10 minutes before removing.
