Mustard Herb Crusted Chicken



These were very easy to make & were delicious! They were crispy on the outside & the chicken was nice & tender.

Recipe makes 6 servings
1 serving = 6 weight watchers smart points

1 3/4 pounds raw boneless skinless chicken breasts (I had 3 chicken breasts that I cut in half)
1/2 cup dijon mustard
4 cloves garlic minced
1 tbsp italian herbs
1 cup panko
1/4 cup shredded parmesan
1 tsp salt
1/4 tsp pepper
1 tbsp olive oil


In a shallow dish stir together dijon, garlic, & herbs.


In a second shallow dish stir together panko, parmesan, salt, & pepper.


Pound chicken breasts flat. Dip each chicken breast in the mustard mixture & then press into the panko mixture.
Heat 1 tbsp olive oil in a pan over medium high heat.


Lay chicken breasts in pan & cook for 2-3 minutes on each side.


Place chicken breasts on a parchment paper lined baking sheet.


Bake in a preheated 400 degree oven for 15 minutes or until cooked through.


I served it with honey mustard for the kids.
