Maple Thyme Roasted Carrots

These had great flavor & were a delicious side dish!

Recipe makes 4 large servings
1 serving = 2 weight watchers smart points

Ingredients-
8 large carrots peeled & sliced
1 tbsp olive oil
1 tbsp maple syrup
1/2 tbsp fresh thyme
Salt to taste

Place cut carrots in a large bowl. Drizzle with olive oil & maple syrup & toss to coat.

Pour onto a baking sheet that has been sprayed with non stick cooking spray. Sprinkle with fresh thyme & salt.
Bake in a preheated 400 degree oven for 30-45 minutes stirring once or twice during cook time.

Chili & Cornbread Pies

We love chili & cornbread so why not put them together in 1 dish? The sweetness of the cornbread baked on top of the chili is such a great combination! I will be making this again!

Recipe makes 9 large servings
1 serving = 8 weight watchers points+ / 10 weight watchers smart points

Ingredients-
1 lb 85% lean ground turkey (did you know you can get these in the freezer section at Aldi for less than $2?)
1 medium yellow onion diced
1 green bell pepper diced
1 clove garlic minced
15 oz can black beans drained & rinsed
15 oz can kidney beans drained & rinsed
15 oz can corn drained
28 oz can diced tomatoes (not drained)
1 tbsp chili powder
1 tbsp cumin
Salt & Pepper to taste
8.5 oz box jiffy cornbread mix
1 egg
1 cup 1% milk

Start by browning your turkey in a large soup pot.

Once turkey is cooked thoroughly add onion & green pepper. Once they are softened add garlic & cook another minute or so.

Add black beans, kidney beans, corn, tomatoes, chili powder, cumin, salt, & pepper. Cook over medium low heat for about 5 minutes.

Meanwhile stir together cornbread mix, egg, & milk.

Separate the chili into ramekins. My ramekins were big so I was able to fit 1 cup into each. I filled 8 large ramekins & 2 small.

Spoon cornbread mix over top of chili. I was able to fit 1/4 cup into each large one.

Place ramekins on a large baking sheet in case they spill. Bake in a preheated 375 degree oven for 15-20 minutes.

Mini Skinny S’mores Cupcakes

These are delicious! They are a bit messy, but it wouldn’t be a s’more if it wasn’t! These have pumpkin in them but don’t worry if you aren’t a fan of pumpkin, you can’t taste it.

Recipe makes 48 mini cupcakes
1 cupcake = 2 weight watchers points+ / 3 weight watchers smart points

Ingredients-
10 full graham cracker sheets (I used Nabisco Original Grahams)
1/4 cup melted coconut oil
1 box Betty Crocker Devils Food Cake mix
15 oz can pumpkin puree
1/4 cup egg beaters
1/4 cup semisweet chocolate chips
144 mini marshmallows

Put graham crackers in a food processor and blend until crumbs. Stir melted coconut oil into crumbs.

Press 1 tsp graham cracker mixture into the bottoms of lined mini muffin pan.
Bake in a preheated 350 degree oven for about 5 minutes.

While crusts are baking mix together cake mix, pumpkin puree, & egg beaters in a large bowl.

Spoon 1 tbsp cake mixture onto each baked graham cracker crust.

Press 2 chocolate chips into the tops of each one.

Bake in a preheated 350 degree oven for about 15 minutes.

Press 3 mini marshmallows onto the tops of each cupcake.

Set oven to broil & watch marshmallows closely. It will only take a few minutes for the marshmallows to puff up & turn golden.

They were a hit in our house!

Sausage, Pepper, & Potato Hash

This is a delicious & easy meal that comes together really quick! When I was young & single I used to make something like this, but with canned potatoes & veggies.

Recipe makes 8 servings
1 serving = 1 cup = 5 weight watchers points+
= 5 weight watchers smart points

Ingredients-
3 tbsp olive oil
1 tbsp butter
1 lb potatoes chopped into bite sized pieces
14 oz turkey kielbasa  (I used fit & active turkey polska kielbasa)
2 bell peppers chopped
1 medium onion chopped

I prepped all my ingredients first but you could easily chop the sausage & veggies while the potatoes are frying.

Heat olive oil & butter in a pan over medium high heat. Add potatoes & cook for about 15 minutes. Try to only stir it a few times so they don’t fall apart as they soften.

Once they are nice & crispy remove with a slotted spoon & put in a bowl. Set aside.

Toss the sausage into the same pan & cook a couple minutes.

Add peppers & onions & cook until they are nice & tender.

Add potatoes & cook another minute or so.
