Grilled Margherita Sandwich

This was a really nice twist on a grilled cheese! I couldn’t believe how much flavor it had! I will definitely be making this again!
The amount of calories & weight watchers points can really vary with this depending on the bread you use & how thick you cut your mozzarella.

Recipe makes 1 serving
1 serving = 1 sandwich = 7 weight watchers points+
= 9 weight watchers smart points

Ingredients –
2 slices wheat bread (I used Sara Lee Delightful 45 calorie wheat bread)
1 clove garlic halved
1 roma tomato sliced
2 oz part skim mozzarella
1 tbsp light butter (I used Challenge Light Butter Spread with Olive Oil)
1 large basil leaf
Garlic Pepper Seasoning (I used Emerald’s Essence)

Rub the inside of the bread slices with the cut side of the garlic.
Layer with half your mozzarella, tomato slices, sprinkle of seasoning, basil leaf, & then the rest of your mozzarella.

Spread the tbsp of butter on the outer side of the bread (1/2 tbsp on each side) & sprinkle with more seasoning.

Spray a pan with non stick cooking spray & cook for a couple minutes on each side or until a nice golden brown.
