Skinny Coconut Lime Zucchini Muffins



I am really proud of these. They are absolutely amazing!
I didn’t use wheat flour or sugar substitute in these like I usually would use when trying to making a recipe skinny, but I still did several substitutions & made them much lower in calories!

Recipe makes about 15 muffins
1 muffin = 4 weight watchers points+
= 7 weight watchers smart points

Ingredients –
3/4 cup egg beaters or better’n eggs
2/3 cup unsweetened applesauce
1 tbsp vegetable oil
1 cup sugar
2 tsp lime zest
2 tsp lime juice
1 tsp coconut extract
2 cups shredded zucchini
2 1/2 cups all purpose flour
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
3/4 cup unsweetened shredded coconut


Start by stirring together egg beaters, applesauce, oil, & sugar.


Next stir in lime zest, lime juice, coconut extract, & zucchini.


In a separate bowl stir together flour, baking powder, baking soda, & salt.


Stir dry ingredients into wet ingredients. Don’t over stir. Fold in shredded coconut.


Spray a muffin pan with non stick cooking spray. Fill 2/3 full. I sprinkled extra lime zest & coconut on top.


Bake in a preheated 350 degree oven for about 20 minutes.
