These were delicious! These could be a healthy snack, appetizer, or even part of a meal! I just made a bunch of different appetizers one night for dinner & it was a hit!

Recipe makes about 6 servings (I just eyed it)
1 serving = 5 weight watchers points+
= 6 weight watchers smart points
3 zucchini sliced into 1/4″ slices
1 tbsp olive oil
1 cup marinara sauce (I used Newman’s Own)
1 1/2 cup part skim shredded mozzarella
1/2 cup shredded parmesan
1 oz mini pepperoni
Heat olive oil in a skillet. In batches lay zucchini slices in skillet & cook for about 2 minutes on each side or until they are a little golden.
Lay zucchini slices out on a baking pan that has been sprayed with non stick cooking spray. Spoon small amount of marinara on top of each one. Sprinkle cheese on top of that. I made a bit of a mess with my cheese… Lay pepperoni on top of cheese.
Bake in a preheated 400 degree oven set to broil for about 5 minutes.
