I could not believe how amazing this was! Every bite I took I commented on how stinking good it was! The whole family enjoyed it! I will definitely be making this again in the near future!

Recipe makes 6 servings
1 serving = 6 weight watchers points+
= 5 weight watchers smart points
1 1/2 lb fresh salmon fillets skin-on
1 cup fresh spinach
1/2 cup non fat greek yogurt
1/2 tsp lemon pepper seasoning
1/2 tsp dried dill
2 cloves of garlic minced
Salt & pepper
3/4 cup part skim shredded mozzarella
First chop the spinach very fine. Stir together spinach, yogurt, garlic, lemon pepper, & dill.
Lay your fillets out on a parchment paper lined baking sheet. Sprinkle generously with salt & pepper.
Spread the spinach & yogurt mixture on top of the fillets.
Place shredded cheese on top.
Bake in a preheated 375 degree oven for 20-25 minutes. Increase heat to 400 & broil for an additional 5 minutes.
I served mine with grilled summer squash & brown rice.
