This was a perfect dinner for a hot summer day! We really enjoyed this salad! I added grilled chicken to it, but it would still be good (& vegan) without!

Recipe makes 8 servings (About 2 cups each)
1 serving = 4 weight watchers points+
= 4 weight watchers smart points
Salad Ingredients –
4 cups kale chopped w/ stems removed
1 large tomato diced
2 bell peppers seeded & diced
1 small jalapeño seeded & diced
1 1/4 cups canned black beans drained & rinsed
1 1/4 cups canned corn drained
1/2 cup diced red onion
1/2 cup cilantro chopped
1 1/2 avocado pitted, peeled, & diced
Dressing Ingredients –
1/2 avocado pitted & peeled
1/2 cup warm water
Juice of 1 lime
1 tsp cumin
3/4 tsp salt
1/2 tsp pepper
Combine all the salad ingredients in a large bowl.
Blend all dressing ingredients in a food processor until smooth.
Drizzle dressing over salad & stir until salad it evenly coated in dressing.
