As I said in a recent blog I have hated pork chops my whole life… turns out I just didn’t like the way they were being prepared! These are so so good! They are a bit high in points so I may try baking them next time so I won’t use so much oil.

Recipe makes 4 large servings
1 serving = 12 weight watchers points+
= 12 weight watchers smart points
Ingredients –
4 lean boneless pork chops (mine added up to about 1 pound)
1/2 cup grated parmesan cheese
Zest of 1 lemon
1/2 cup egg beaters or better’n eggs
1 cup panko bread crumbs
1/4 cup olive oil
Stir together parmesan & lemon zest. Put egg beaters & bread crumbs in separate dishes. Take your pork chop & dip it in the cheese & lemon mixture making sure to coat it well. Next dip it in the egg. Lastly dip it in the bread crumbs.
Heat 2 tbsp olive oil in a skillet over medium heat. Place pork chops in skillet & cook for about 6 minutes on each side. I tested mine with a meat thermometer since I am new to making pork.
Repeat with the next 2 pork chops.
