I know it doesn’t look too appetizing, but it was delicious! I think meatloaf gets a bad rap, but I have always loved it!

Recipe makes 8 servings
1 serving = 3 weight watchers points+
= 3 weight watchers smart points
1 lb 93% lean ground beef
2 tsp olive oil
1 cup finely chopped mushrooms
1 carrot finely shredded
1 stalk of celery finely chopped
1 onion finely chopped
2 cloves garlic minced
1/2 cup quick oats
2 egg whites
3 tbsp ketchup
1 tbsp worcestershire sauce
1 tsp salt
1/4 tsp pepper
1/4 cup ketchup for brushing on top
Heat the olive oil in a pan & cook the onion, carrots, mushrooms, & celery for about 4 minutes or until onion is cooked. Add garlic & cook another minute. Remove from heat & set aside.
In a large bowl combine ground beef, egg whites, oats, ketchup, worcestershire sauce, salt, & pepper.
Stir cooked vegetables into meat mixture.
Spray a 9×5 loaf pan with non stick cooking spray & press mixture into pan.
Bake in a preheated 350 degree oven for 40 minutes. Brush top with 1/4 cup ketchup.
Bake for another 30-40 minutes or until internal temperature is 160 or higher.
