Salmon with Spicy Cucumber Pineapple Salsa

This was a delicious dish! Great combination of flavors! I didn’t make my salsa really spicy but it still had a nice kick. The original recipe called for a kirby cucumber, but I honestly have no clue what that is so I just used 1 1/2 regular large cucumbers.

Salmon recipe makes 4 servings
1 serving = 7 weight watchers points+
= 6 weight watchers smart points

Salsa recipe makes about 8 servings
1 serving = 1 weight watchers points+
= 2 weight watchers smart points

Salmon Ingredients –
4 salmon fillets skin-on 5-6 oz each
1 tbsp olive oil
Salt & pepper

Salsa Ingredients –
2 tbsp olive oil
Juice of 1 lime
1 tbsp honey
1 1/2 large cucumbers diced small
1/2 pineapple diced small
1 jalapeño seeded & minced
1/4 cup fresh basil roughly chopped
2 scallions thinly sliced
Salt & pepper to taste

Whisk together olive oil, lime juice, & honey.

Stir remaining salsa ingredients together with oil, lime, & honey mixture. Set aside.

Generously salt & pepper salmon fillets. Heat 1 tbsp olive oil in a skillet over medium high heat. Place fillets skin side down in the hot skillet. Cook until skin is crispy & salmon is opaque 3/4 of the way through. Flip & cook a few more minutes or until the rest of the salmon is opaque.

Top with salsa & enjoy!
