This was a great combination of sweet, spicy, hot, & cold! Next time I will use more salt in the marinade & will remember to buy cilantro for the salsa, but this had great flavor!

1 serving = 1/2 weight watchers points+
= 1 weight watchers smart points
Jerk Chicken Ingredients –
1 1/4 lb skinless boneless chicken breasts
2 tsp minced onion
2 tsp dried thyme
2 tsp ground black pepper
2 tsp all spice
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground chipolte pepper
1 tbsp honey
Juice of 1 lime
Juice of half a fresh orange
1/4 cup soy sauce
1/4 cup olive oil
2 tbsp apple cider vinegar
Whisk together all ingredients other than the chicken.
Pour about half the marinade over the chicken breasts & let marinate for 8-24 hours. I let it marinate for 10 hours.
Save the other half of marinade for basting later. Pull out of fridge about an hour before cooking.
Grill chicken breasts until cooked fully.
Brush reserved marinade over the chicken towards the end of the cook time.
Slice chicken up.
Serve with salsa on top.
Salsa Ingredients –
1 mango peeled, pitted, & chopped small
1/2 avocado peeled, pitted, & chopped small
1/2 fresh pineapple peeled, pitted, & chopped small
1 jalapeño seeded & diced small
1/4 cup red bell pepper seeded & diced small
1/4 cup red onion diced small
Juice of 2 limes
2-3 tbsp cilantro chopped (I didn’t have any but I really wish I had because the flavor was missed)
Combine all ingredients. Cover & refrigerate at least 1 hour so flavors can combine.
Top chicken with salsa. It’s also good with tortilla chips.
