This is such a great summer dish! I ended up with only half a pint of strawberries & a mango that wasn’t quite ripe but it still had great flavor!

Recipe makes 8 servings
1 serving = 1 cup = 4 lettuce wraps = 6 weight watchers points+
= 7 weight watchers smart points
1 lb skinless boneless chicken breasts
1 large head butter lettuce
1 pint strawberries chopped
1 mango pitted peeled & diced
1 cucumber diced
1 avocado pitted peeled & diced
2 tbsp red onion diced
2 tbsp apple cider vinegar
1/4 cup olive oil
1 tbsp lemon juice
1/4 tsp worcestershire sauce
1/4 cup sugar
1 tbsp sesame seeds
1/2 tbsp poppy seeds
1 tsp minced onion
1/4 tsp paprika
1/2 tsp salt
1/4 tsp pepper
First step is to cook your chicken. I grilled mine, but you could always boil it, bake it, or just cook it up in a pan. Once it is cool enough to handle dice it up.
In a small bowl whisk together vinegar, oil, lemon juice, worcestershire sauce, sugar, sesame seeds, poppy seeds, minced onion, paprika, salt & pepper. Set aside.
In a large bowl stir together diced chicken, cucumber, mango, strawberries, & red onion. I threw in a handful of blueberries too!
Drizzle dressing over top & stir it all together. Place it in the fridge for at least an hour to let the flavors mingle.
Scoop about 1/4 cup into each butter lettuce leaf.
