This was so good that I ate more as a nighttime snack!

Recipe makes 8 servings (I just eye it)
1 serving = 8 weight watchers points+
12 oz grilled boneless skinless chicken breast diced
1 cup la choy chow mein noodles
3/4 cup sliced almonds toasted
10 oz baby spinach
2 cups snow peas (I couldn’t find these so I used sugar snap peas)
1 1/2 cups matchstick carrots
1 red bell pepper seeded & diced
15 oz can mandarin oranges drained well (No sugar added)
1/2 cup cilantro roughly chopped
Dressing Ingredients –
1/2 cup olive oil
Juice & zest of 1 lemon
2 tbsp honey
2 tbsp peeled & grated ginger
1 clove garlic
1 tsp dijon mustard
Salt to taste
Mix all dressing ingredients in a food processor until garlic & ginger are pureed.
Place all salad ingredients in a large bowl. Drizzle dressing over top. Toss to coat.
