This is really easy to make & has such good flavor! I had planned on making it with basil but my basil went bad before I could use it so I made it with cilantro.
I made my husband’s sandwich with ciabatta bread, but I used a flatbread to reduce carbs.
Recipe makes 7 servings
1 serving = 1/4 cup = 6 weight watchers points+ (does not include bread or wrap)
12 oz cooked shredded boneless skinless chicken breasts cooled (about 2 cups)
1/4 cup plain non fat greek yogurt
1 cup fresh cilantro (or basil)
3 tbsp pine nuts
3 cloves garlic minced
1/3 cup shredded parmesan
1/3 cup olive oil
Salt & pepper to taste
To make the pesto combine cilantro, garlic, pine nuts, parmesan, & olive oil in a food processor. Process until fairly smooth.
In a large bowl combine shredded chicken, pesto, & greek yogurt.
Serve in a sandwich, wrap, or just eat it on it’s own!
