These didn’t last long in our house! I really like the combination of flavors in these!
Recipe makes 6 scones
2 scones = 5 weight watchers points+
1/3 cup all purpose flour
1/3 cup whole wheat flour
1 tbsp truvia brown sugar blend
1/2 tsp baking powder
1/4 tsp baking soda
Dash of salt
1 tbsp Land O’ Lakes light butter cold
1/3 cup plain non fat yogurt (vanilla would be good too)
8 dried apricots chopped
1 tbsp finely chopped fresh rosemary
1 tsp milk
1 tsp sugar
Stir together flours, baking powder, baking soda, truvia, & salt.
Cut butter into small pieces & then using a pastry cutter incorporate into dry ingredients until it becomes like a coarse meal.
Stir in yogurt, apricots, & rosemary until a dough forms.
Knead several times on a flour covered surface. The dough will be pretty sticky.
Lay out on a greased baking sheet & form into a 5″ circle. Brush with milk & sprinkle sugar on top.
Cut & slightly separate pieces.
Bake in a preheated 400 degree oven for about 15 minutes.
You may have to separate them a bit more when they come out of the oven.
