This is such a fresh & flavorful side dish! I accidentally bought white corn so it isn’t as pretty as I had hoped.

Recipe makes 6 servings
1 serving = 3 weight watchers points+
Ingredients –
6 ears of corn
1 pint grape tomatoes halved
8 fresh basil leaves chopped
1 tbsp olive oil
2 tsp red wine vinegar
1 tsp dijon mustard
Salt & pepper to taste
First step is to bribe a little one with icecream to get some help shucking all that corn!
Spray the grill with non stick spray & cook corn on medium heat for about 10 minutes.
Once the corn is cool cut the corn off the cob. Stir together with tomatoes.
Stir together basil, vinegar, oil, & mustard in a small bowl. Pour over corn & tomatoes & stir. Season with salt & pepper. Store in the fridge until ready to serve.
