I am in love with this salad. It is crunchy, cold, flavorful, & very healthy!

Recipe makes 6 large servings (I just eye it)
1 serving = 6 weight watchers points+
1 cup uncooked quinoa
1 pint grape or cherry tomatoes quartered
1 large or 2 small cucumber diced
1 large red bell pepper diced small
1 avocado diced peel & core removed
1/2 cup parsley chopped
15 kalamata olives pitted & chopped
3 1/2 oz reduced fat feta crumbled
Juice of 1 lemon
2 tsp cumin
1 tsp black pepper
1 tsp garlic powder
Bring 1 1/4 cups water to a boil in a small pot. Stir in 1 cup quinoa. Simmer on low for 8-10 minutes. You want it still a bit firm for this salad. Remove from heat, stir, & let cool.
Whisk together lemon juice, cumin, pepper, & garlic powder in a small bowl. Set aside.
In a large bowl stir together cooled quinoa, cucumber, tomatoes, red pepper, avocado, olives, parsley, & feta. Drizzle dressing over top & stir once more.
