I love that hummus is so versatile. It can be used as a dip with veggies, crackers, chips, & pita or it can be used as a spread on a sandwich. This one had really good flavor and was a bit spicy.

Recipe made about 3 1/2 cups
1/4 cup = 2 weight watchers points+
Ingredients –
1 medium sweet potato peeled & diced
15 oz can chickpeas drained & rinsed
1 clove garlic minced
Juice of 1 lime
2 tbsp tahini
3 tbsp olive oil
1 chipolte pepper
2 tsp adobo sauce (from a can of chipotle peppers)
1/2 tsp salt
1/2 tsp cumin
1/2 tsp smoked paprika
1 tsp chili powder
Steam your diced sweet potatoes for about 10 minutes or until very soft. Set aside & let cool for a bit.
Combine sweet potatoes & all remaining ingredients in a food processor & run until smooth.
