I love chicken salad & this one did not disappoint. The only things I will change when I make it next is adding more pineapple & maybe some coconut.
I served mine on a spinach salad but it would also be good in a sandwich, wrap, or even on its own!

Recipe makes 8 servings
1 serving = 1/2 cup = 5 weight watchers points+
1 lb boneless skinless chicken breasts cooked & diced (I just boiled mine)
8 oz can pineapple chunks drained
1 1/2 cups red grapes halved
6 oz Green Mountain Farms Cream Cheese & Greek Yogurt Blend softened
1/3 cup light hellmans mayonnaise
1/2 cup slivered almonds
Salt & pepper to taste
Mix all ingredients together in a large bowl. I like to make mine ahead & let the flavors combine a bit before serving it.
