These were really good! I did feel like they needed to be a bit sweeter so next time I may use a cinnamon sugar mixture on them.

Recipe makes 4 servings
1 serving = 4 weight watchers points+
3 medium sweet potatoes
1 tbsp olive oil
Slice the sweet potatoes into 1/2 inch slices.
Add sweet potato slices to a pot of boiling water & cook for 5 minutes.
Using a slotted spoon remove sweet potato slices from the boiling water & place in a bowl of cold water.
Drain cold water & drizzle olive oil over sweet potatoes. Stir to coat.
Lay slices out & sprinkle with salt & cinnamon.
Place sweet potato slices on grill cinnamon side down. Sprinkle the other side with salt & cinnamon.
