Blueberry Chicken Chopped Salad



This a perfect summer salad! It was a good combination of sweet & salty.

Recipe makes 8 servings  (I just eye it but it was probably about 2 cups)
1 serving = 8 weight watchers points+

Salad Ingredients –
1 lb grilled chicken breasts chopped
2 romaine lettuce hearts chopped
1 pint fresh blueberries
1/2 cup blue cheese crumbles
1 cup pecan halves roughly chopped
1/2 large red onion diced

Dressing Ingredients –
1/3 cup olive oil
3 tbsp red wine vinegar
2 tsp honey
1 tsp dijon mustard
Pinch of salt & pepper


Whisk together all dressing ingredients.    


Toss all ingredients in a large bowl. Drizzle with dressing & toss a bit more.
