If you like cheese then this is the quiche for you! It has mozzarella, asiago, & goat cheese in it!

Recipe makes 6 servings
1 serving = 4 weight watchers points+
Ingredients –
2-3 sweet potatoes thinly sliced
1 small yellow onion diced
1 clove garlic minced
6 cups fresh spinach
1 cup egg beaters or better’n eggs
1 cup part skim shredded mozzarella
1/4 cup goat cheese
1/4 cup shredded asiago
Salt & pepper to taste
2 tsp dried parsley
I suggest using a mandolin slicer for the sweet potatoes. I cooked this at my parents house so all I had was a knife & it took forever to slice them thin.
Spray non stick cooking spray in a 9″ pie pan. Lay the sweet potatoes in the pan. Overlapping is fine.
Spray the sweet potatoes with more cooking spray & sprinkle with salt & pepper.
Bake in a preheated 400 degree oven for 15 minutes.
Meanwhile spray a pan with non stick cooking spray & saute the diced onion & minced garlic.
Once the onions are tender add your spinach.
After the spinach cooks down remove the pan from the heat & set aside.
Stir together egg beaters, mozzarella, & goat cheese.
Stir cooked onion, garlic, & spinach into the egg & cheese mixture. Next stir in parsley, salt, & pepper.
Pour mixture over sweet potato crust.
Sprinkle asiago cheese on top.
Bake in a preheated 375 degree oven for 40 minutes.
