2 Ingredient Peanut Butter Cookies



These are vegan, gluten free, easy, & delicious! Even as I was making them I was pulling out some oats because I wasn’t convinced it could turn into cookie dough, & then all of a sudden it all came together!

These are kind of high in weight watcher points+, but I made them as a special treat to bring along on our picnic today to celebrate Willa getting her cast off her leg!

Recipe makes about 1 dozen cookies (mine made 13)
1 cookie = 4 weight watchers points+

Ingredients –
1 cup peanut butter (I used jif but if you use an unsalted peanut butter you will want to add a pinch of salt to the dough)
1/4 cup + 1 tbsp pure maple syrup


Blend it all up in the food processor until it becomes a cookie dough texture.


Using a large cookie scoop place cookies on a parchment paper lined baking sheet.


Press cookies down in a criss cross pattern.


Bake in a preheated 350 degree oven for 8-10 minutes. Let cool before removing from pan.
