Quinoa Burrito Bowls



I love the combination of flavors in this! It was really easy to put together also!

Recipe makes 5 very large servings
1 serving = 8 weight watchers points+

Ingredients –
3 cups cooked quinoa
1 small yellow onion diced
1 tbsp olive oil
1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
1/4 tsp oregano
1 tsp cumin
15 oz can corn drained
15 oz can black beans drained & rinsed
1 cup cilantro roughly chopped
4 roma tomatoes diced
1 avocado sliced


Saute onion in olive oil. Once onion is translucent remove from heat & stir in quinoa, chili powder, salt, pepper, oregano, & cumin. Divide evenly into 5 bowls.


In a separate bowl stir together corn, beans, tomatoes, & cilantro.


Divide evenly over quinoa.
Place sliced avocado on top.
Serve with your choice of dressing. I made a cilantro lime dressing.

Cilantro Lime Dressing

Recipe makes 4 servings
1 serving = 1/4 cup = 1 weight watchers points+

Ingredients –
1/3 cup light sour cream
1/3 cup nonfat greek yogurt
1/2 cup cilantro
Juice from 1 lime
1 tsp salt.


Blend together in a food processor. Drizzle on top of burrito bowl or your favorite salad!
