This cake didn’t last long in our home. You can add frosting or even fresh berries & whip cream to this, but we ate it plain & loved it!

Recipe made 8 servings
1 serving = 4 weight watchers points+
1 cup sugar
6 large eggs
Zest from 1 lemon
Juice from 1/2 lemon
1/2 cup cornstarch
In a large bowl beat together 6 egg yolks & sugar until combined.
In a separate bowl beat the 6 egg whites on high speed until stiff peaks form.
Beat lemon zest & juice into egg yolk mixture.
Slowly fold egg whites into egg yolk mixture.
Stir in cornstarch.
Pour into a well oiled pan. I used an angel food cake pan.
Bake in a preheated 300 degree oven for 60 minutes.
