Growing up in Michigan I had no idea what this stuff was until I moved to the south. It is kind of strange & slimy when it is raw, but it has really good flavor when it is breaded & fried. I decided to try to roast it tonight & it turned out pretty good! I think next time I will toss it in some olive oil before roasting it to give it a little more flavor & crunch.
Entire recipe = 0 weight watchers points+! (Obviously using olive oil will increase the amount of points)
Ingredients –
1 lb okra sliced (1/2″-1″ slices)
Non fat cooking spray
Salt & pepper to taste
I cut mine all different sizes.
Lay them out on a baking sheet & spray with cooking spray. Sprinkle salt & pepper on them.
Roast in a preheated 450 degree oven for 15-20 minutes stirring occasionally.
