Apple Dijon Kale Salad

This was such a great combination of sweet & salty. I served it with baked chicken on top.

Recipe makes 6 servings
1 serving = 5 weight watchers points+ (not including the chicken)

Salad Ingredients –
4-6 cups chopped kale stems removed
1/2 cup chopped walnuts
1/4 cup raisins (I may use more next time)
1 granny smith apple chopped
1 tbsp lemon juice

Dressing Ingredients –
1/3 cup olive oil
1/4 cup apple cider vinegar
1 clove garlic
1 1/2 tbsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper

Toss the chopped apple & lemon juice in a bowl. Make sure apple is completely coated in the lemon juice so that it doesn’t turn brown.

Put all salad ingredient together in a large serving bowl. Set aside.

Put all dressing ingredients in the food processor & pulse until blended & there are no large chunks of garlic left.
Pour over salad & toss to coat.
