I love biscotti. They are like crunchy cookies that are ok to eat for breakfast! I love dipping mine in my coffee.

Recipe makes 12 servings
1 serving = 2 weight watchers points +
Ingredients –
1 cup whole wheat flour
1/4 cup roughly chopped almonds
3/4 tsp baking powder
1/4 tsp salt
1/4 cup truvia brown sugar blend
1/4 cup egg beaters
2 tsp vanilla extract
1 tsp almond extract
2 tsp lemon juice
2 tsp water
1/3 cup dried cherries
In a large bowl mix together flour, almonds, baking powder, & salt.
In a separate bowl mix sugar & egg beaters with hand mixer on high speed for several minutes. Add extracts, lemon juice, & water & mix until combined. Mixture should be light & fluffy. (I was distracted by a toddler tantrum & mixed all the wet ingredients before realizing I was supposed to beat the sugar & eggs first. I just beat it all on high speed for several minutes & mine turned out fine.)
Using hand mixer combine wet & dry ingredients until soft dough forms. Stir in dried cherries.
Place dough on a parchment paper lined baking sheet & with wet hands form into a rectangle.
Bake in a preheated 350 degree oven for 20 minutes or until edges start to brown.
Lift parchment paper & cookie off baking sheet & set on counter to cool for 5-10 minutes.
Once it is cool enough to handle place it on a cutting board & cut into 12 slices.
Place sliced biscotti back on the parchment paper lined baking sheet & bake for another 5 minutes. Flip them & bake another 5 minutes. If they are still a little soft don’t worry. They harden as they cool.
