I really enjoyed this! The basil seemed a little out of place & not needed so I will leave it out next time & maybe add some sautéed onions.

Recipe makes 8 servings
1 serving = 1 weight watchers points+!
2 cups cubed butternut squash
2 cups kale finely chopped
1 3/4 cups egg whites
1 tsp basil (will leave it out next time)
1 tsp salt
1/2 tsp pepper
1/2 cup shredded part skim mozzarella
Place squash in a glass bowl & cover with cling wrap. Microwave for 3 minutes on high. Once it has cooled enough to handle it chop it into smaller pieces.
While squash is cooking spray a pan with non stick cooking spray and toss in the kale. Saute over medium low heat stirring occasionally for 3-4 minutes or until kale is wilted & dark green.
Spray a 9″ pie pan with non fat cooking spray & then layer your squash & kale.
Whisk together egg whites & spices. Pour over squash & kale. Sprinkle cheese on top.
Bake in a preheated 325 degree oven for 35-40 minutes or until it non longer jiggles in the center.
