Apple Pie Breakfast Quinoa



I am really enjoying cooking & baking with quinoa lately! It’s easy to make, filling, high in protein, & delicious!

Original recipe from

Recipe makes 2 servings
1 serving = 4 weight watchers points+

Ingredients –
1/2 cup uncooked quinoa
1/2 cup unsweetened apple sauce
1 cup water
1 tsp cinnamon
1 tsp vanilla extract
1/4 tsp nutmeg
1 apple peeled & chopped


Toss all ingredients in a pot over medium high heat. Bring to a boil & then reduce heat & simmer for about 15 minutes.


It is done when most of the liquid has been absorbed.
