Mmm… these were so good! You couldn’t even really tell these were healthy & I love how filling & packed with protein they are! The kids loved them too!

Pancake recipe makes about 24 pancakes
1 pancake = 1 weight watchers points+
Entire syrup recipe = 6 weight watchers points+
Pancake Ingredients –
1 cup cooked quinoa cooled
1 1/3 cup whole wheat flour
1 cup + 1 tbsp 1% milk
1 tbsp truvia brown sugar blend
2 bananas mashed
1 tsp vanilla extract
4 egg whites (1/2 cup)
Syrup Ingredients –
1 cup frozen or fresh blueberries
1/4 cup pure maple syrup
In a medium sized bowl stir together cooled quinoa, flour, truvia, & milk.
In a small bowl mix together mashed bananas, egg whites, & vanilla.
Mix the contents of both bowls together & you have your pancake batter.
Use a non fat cooking spray on a hot pan over medium high heat. Scoop 2 tbsp onto pan for each pancake. Flip once golden.
They are done once both sides are golden.
While pancakes are cooking mix together your blueberries & syrup. Cook over medium heat until blueberries are bursting open. I used frozen blueberries & my syrup was pretty thin. I think next time I will try fresh to see if it ends up thicker.
I served mine with country chicken sausage & fruit salad.
