Mine didn’t turn out very pretty, but once I tasted them I didn’t care! My husband & I had to split the last one cause we both really wanted it!
I think next time I won’t use the extra thin tortillas to see if that makes a difference in the tortilla not cracking & looking ugly. I am pretty sure those are higher in points though.

Recipe makes 8 servings
1 serving = 2 weight watchers points+
Ingredients –
8 – 6 inch extra thin corn tortillas
10 oz can 98% fat free organic canned white chunk chicken drained very well
1/2 cup salsa
1/3 cup 2% mexican 4 cheese (I used kraft)
1/2 tsp dry taco seasoning
Mix together drained chicken & salsa. Put in fridge for 15 minutes.
After 15 minutes stir in shredded cheese & taco seasoning.
Place corn tortillas between 2 damp paper towels & microwave for 30-60 seconds or until they become pliable.
Remove 1 tortilla & lightly spray both sides with non stick cooking spray.
Spoon 2 tbsp filling onto tortilla & roll up.
Use tooth picks to secure it & place seam side down on a greased baking sheet.
Repeat with each tortilla.
Bake in a preheated 350 degree oven for 15 minutes. Let stand for 5 minutes before removing tooth picks & serving.
