This is a healthy alternative to enchiladas. It’s pretty easy to make & was really flavorful!

Recipe makes 6 large servings
1 serving = 8 weight watchers points+
Ingredients –
1 1/2 cups cooked shredded chicken breast
1 1/2 cups cooked quinoa
1 yellow onion diced
2 tbsp olive oil
15 oz can black beans drained & rinsed
4 oz can green chilis
2 cups canned enchilada sauce
1 tbsp chili powder
1 cup kraft 2% mexican cheese
In a large saucepan heat olive oil over medium high heat. Add onions & cook until tender.
Turn heat down to low & stir in chicken, quinoa, black beans, green chilis, chili powder, & enchilada sauce.
Pour into a 2 or 3 quart casserole dish & top with cheese.
Bake in a preheated 375 degree oven for about 20 minutes.
