I may double this recipe next time because we really liked it! It’s flavorful, healthy, & it made a perfect side dish to my lemon thyme chicken.

Recipe made 4 servings
1 serving = 3 weight watchers points+
1 head cauliflower chopped
1 tbsp olive oil
2-4 cloves garlic minced
2 tbsp chopped fresh parsley
1/3 cup shredded parmesan
Put chopped cauliflower in a greased casserole dish. Drizzle olive oil over cauliflower & then sprinkle the garlic over it too. Toss to coat.
Bake in a preheated 400 degree oven for about 25 minutes. Sprinkle with parsley & parmesan after it comes out of the oven.
