This a rich, creamy, & healthy soup that is perfect for a cold wintery day!

Recipe makes 4 servings
1 serving = 3 weight watchers points+
Ingredients –
1 tbsp olive oil
1 yellow onion diced
1 1/2 lbs zucchini 1/4″-1/2″ slices
4 cups chicken stock
1 tsp salt
1/2 cup uncooked brown rice
1/4 cup fat free half & half
Heat the oil in a large soup pot. Saute onions until translucent & slightly golden around the edges.
Add zucchini & stock & cook for about 15 minutes until the zucchini is tender.
Once zucchini is cooked transfer in 3-4 batches into blender & puree the mixture. Once pureed put back in the soup pot over medium high heat. Add rice & salt. Bring to a boil & then turn down to low & simmer for 45-60 minutes until rice is cooked.
Once rice is cooked stir in half & half.
I served mine with fresh homemade whole wheat bread.
