Chopped Kale Greek Salad with Parsley Lemon Vinaigrette

Recipe makes 8 servings
1 serving = 2 cups = 250 calories = 7 weight watchers smart points

Salad Ingredients –
5 oz fresh kale rinsed, dried, & chopped with any large stems removed
15 oz can chickpeas drained & rinsed
2/3 cup kalamata olives pitted
1 cucumber seeded & diced
1 pint cherry tomatoes halved
1/2 red onion thinly sliced
3.5 oz reduced fat feta cheese

Dressing Ingredients-
1/2 cup olive oil
1/4 cup fresh parsley chopped very fine
3 tbsp fresh lemon juice
3 tbsp red wine vinegar
2 cloves garlic finely minced
1/2 tsp salt
1/4 tsp pepper


Once kale has been rinsed, dried, & chopped place it in a large bowl.


Top kale with the remaining salad ingredients.


Whisk together all the dressing ingredients & pour over salad. (The second time I made this I blended all the dressing ingredients together in a food processor & i liked it much more)

I served it with grilled chicken & sesame breadsticks.
