Roasted Tomato, Avocado, & Smashed Chickpea Sandwiches

My husband was quite skeptical of this but he ended up really liking it! The original recipe was vegan & called for “cheesy” tofu, but I didn’t have all the ingredients for that so I used laughing cow light swiss cheese.

Recipe makes 4 sandwiches
1 sandwich = 8 weight watchers points+

Ingredients –
8 slices Arnold Seedless Jewish Rye Bread toasted
1 avocado smashed
1/2 cup chickpeas drained, rinsed, & smashed
4 Laughing Cow Light Swiss Cheese wedges
4 roma tomatoes
1 tsp garlic powder
Salt & pepper
2 tbsp olive oil

Slice your tomatoes into 1/2 inch slices. Lay slices on a parchment paper lined baking sheet.  Drizzle olive oil over tomatoes & sprinkle with salt & pepper. Roast in a preheated 350 degree oven for 35 minutes.

Add garlic powder & some salt & pepper to your smashed chickpeas.

To make each sandwich lay out 2 slices of toasted bread. Spread 1/4 of the smashed avocado on one slice. Spread 1 cheese wedge on the other slice of bread. Top the cheese covered side with 2 tbsp smashed chickpea mixture. Lay the roasted tomatoes on top of that and press the avocado covered side on top.
