I have been making the same chicken noodle soup for years so I decided to switch it up a bit & try a new recipe. This one turned out really good! Perfect for a cold winter day!
Recipe makes 9 large servings
1 serving = 3 weight watchers points+
Ingredients –
1 lb boneless skinless chicken breasts (I used chicken breast tenders)
3 large carrots chopped
3 ribs celery chopped
1 yellow onion chopped
8 cups fat free chicken broth
1 can Campbells low fat cream of chicken soup
2 cloves garlic minced
1 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp black pepper
1 tsp dried dill
1 tsp salt
4 oz no yolk noodles
Whisk together chicken broth & cream of chicken soup. Place all ingredients other than the noodles in a large crock pot. Cook on low for 8 hours.
After 8 hours take chicken out of soup & shred it using 2 forks. (I leave it pretty chunky)
Return chicken & 4 oz noodles into crock pot.
Cook for another 15-20 minutes or until noodles are done.
