This was so good! It was healthy but had quite a bit of points to it due to healthy fats.

Recipe makes 8 servings
1 serving = 4 weight watchers points+
Dressing Ingredients –
1/4 cup rice wine vinegar
1/2 tsp powdered ginger
1 tbsp soy sauce
2 tbsp honey
3 tbsp toasted sesame oil
2 tbsp vegetable oil
2 tbsp creamy peanut butter
Salad Ingredients –
6 cups fresh spinach
1 large carrot shredded
1 red pepper thinly sliced
1/2 large cucumber thinly sliced
1/4 red onion thinly sliced
8 oz sugar snap peas
1/4 cup roasted peanuts
1 tbsp toasted sesame seeds
Put all dressing ingredients in food processor & pulse several times. Set aside.
Bring about 2-3 cups water to boil & add sugar snap peas. Boil for about 5 minutes. Rinse with cold water & set aside.
Combine spinach, carrot, cucumber, pepper, onion, & peanuts in a large bowl. Add cooked & cooled sugar snap peas.
Pour dressing on top of salad & toss to coat. Sprinkle with sesame seeds.
I served mine with grilled chicken.
