Skinny Pumpkin Muffins



These are really good & super easy to make! Every time I have made them both my kids eat them up so fast!

The first time I made them I didn’t add the egg beaters & they seemed a bit doughy even though they were done. I tweaked the recipe a bit & we can’t get enough of them!

Recipe makes 24 muffins
(I usually make 1 dozen regular size for me & 2 dozen mini muffins for the kids)
1 regular size muffin = 3 weight watchers points+

Ingredients –
1 box spice cake mix
15 oz can pumpkin
2 tbsp egg beaters
1 tbsp cinnamon

Mix all ingredients together & spoon into greased muffin tin. You can also use cupcake wrappers.

Bake in preheated 350 degree oven for about 15 minutes or until tooth pick inserted into the center comes out clean.
