Cauliflower Chowder



We are in the middle of an ice storm so I thought a good hearty chowder & grilled cheese would be perfect for dinner! Not only was this easy to make & healthy, but it was also delicious!

Recipe makes 4 large servings
1 serving = 4 weight watchers points+ (only 3 if you don’t use the bacon garnish!)

Ingredients –
2 tbsp butter
1 yellow onion diced
2 carrots chopped
2 ribs celery chopped
2 cloves garlic minced
1 head cauliflower chopped
1 bay leaf
1/4 cup flour
4 cups fat free chicken broth
1 cup 2% milk
Salt & pepper to taste (I used about 2 tsp salt & 1 tsp pepper)
4 slices turkey bacon fried & chopped up for garnish


Melt better in a large pot. Once melted add onion, carrots, celery, & garlic. Cook until tender.


Add cauliflower & bay leaf. Cook for about 10-15 minutes or until cauliflower is tender.
Slowly stir in your flour 1 tbsp at a time. Once flour is incorporated stir in your broth & milk.


Bring to a boil & simmer for about 15 more minutes stirring occasionally.


Top with crumbled bacon.
