In the original recipe these were called zucchini pizza but they aren’t really much like pizza. They are still really good though! I made them as a main dish, but I think they would be better suited as a side dish.

Recipe makes 8 servings
1 serving = 2 weight watchers points+
Ingredients –
4 zucchini
1/4 cup olive oil
1 tbsp garlic powder
1 tsp salt
1/4 tsp pepper
25 cherry tomatoes
1/4 cup panko bread crumbs
4 oz part skim mozzarella cut into cubes
A few sprinkles of grated parmesan
Start by cutting the ends off your zucchini. Slice them in half long ways. If the skin side is very rounded & won’t sit flat trim a slice off so it sits without rolling. Scoop out the seeds from the center of the zucchini so that the zucchini resemble boats.
Mix together the olive oil, garlic powder, salt, & pepper. Brush oil mixture over the zucchini halves.
Slice cherry tomatoes in half & place skin side down inside the zucchini.
Sprinkle with bread crumbs.
Bake in a preheated 350 degree oven for 30 minutes.
Remove from the oven & stick your mozzarella pieces in between your tomatoes.
Set under broiler until cheese is golden & bubbly.
Sprinkle with grated parmesan when it comes out of the oven.
I served mine with salad, crescent rolls, & spaghetti squash.
