These are so good! I love having something little like this that I can grab when I need a little pick me up or am craving something sweet. They are gluten free & vegan. The combination of blueberries & lemon is one of my new favorite combinations!

Recipe makes 30 energy bites
1 bite = 2 weight watchers points+
Ingredients –
1 1/2 cups cashews
1/2 cup shredded coconut + extra for rolling in
1/2 cup dried blueberries
3/4 cup medjool dates pitted & roughly chopped
Juice from 1 1/2 lemons
2 tbsp lemon zest + extra for rolling in
1 tsp vanilla extract
In the food processor blend cashews & coconut until they make a corse meal.
Add blueberries, dates, vanilla, lemon juice, & lemon zest & blend until a soft dough forms that can easily hold together when pinched between fingers.
Roll into 1 inch balls & roll in extra lemon zest & coconut.
Store in your fridge for up to 1 week although I doubt they will last that long!
